Are there any plants that will grow in just sand with no root tabs and just liquid ferts? (Other than epiphytes)

Lots. Especially with CO2 & good light.

It does seem to take a bit of time to build a good "ecosystem" in most inert substrates. IME, a 2yr old tank will grow plants a bit better than sterile new sand (all other things being equal).
Agreed, almost all my tanks are blasting sand. I do very rarely add a little root tab but liquid ferts are the main.

I do notice growth improves as the tank matures. Especially with crypts and swords. I add trumpet snails too all of my sand tanks as it seems to help keeping the sand aerated and my theory is it helps with nutrient transport down into the sand
