I’m new to the planted tank world and am trying to get a good substrate for my plants. Would it be better to get Fluval Statum Lava rock, or Flourite Seachem Porus Clay?

Either can work, but they function very differently. I would research the difference between active and inert substrates (Stratum is active and Flourite is inert) and figure out which better suits your needs. It's not just a matter of one being objectively better than the other, though most people would have a preference. I have the impression that from a cost perspective there are better inert options than Flourite though.

You’re going to get a lot of different answers and requests for more info.

I use a combination and varying ratios of seachem fluorite sand and eco-complete and they seem to do pretty well. My ratio of sand to gravel is determined by whether the tank is going to have bottom dwelling fish who like to sift through sand (cories, rams...)
