I was looking at my shrimp and noticed one of them had small white balls inside of it. They've just gone through their molt so I was wondering if these could possibly be eggs. Whatever I look up only show berried shrimp.

Those are indeed eggs... unfertilized eggs.

Once she molts and mates with a male(s), she'll move the eggs down into her pleopods. This process fertilizes them as they move.
