Hello all,
I'm trying to find out what kind of stainless steel mesh is to be used for planted aquariums and shrimp tanks? I plan to use it for mosses as well as for shrimp houses.

What type do I need to use and where is the cheapest place to get it in good amounts?

Anything in the 300 series 316, 304 would be a good choice for ss.
I'd look on Mc-Master Carr, MSC or Grainger for wire cloth.
I can't really recommend sizes for you, but this might be a good choice for a moss wall:
Mc-Master Carr# 9322T66
