Has anyone had issues with water sprite blocking too much light?

Quick growing stuff like water sprite, hornwort, guppy grass need frequent trimming or they will take over your tank and choke everything else out.

Watersprite can require frequent mowing.

If babies are rooting off the stalks you can plant them and ditch the larger stem after cutting.

Usually if the root ball is left behind it will just grow larger stems.
