Just wondering how I can heat my tank if I have the top covered, and water level around where the soil is.

You could get an undergravel heater.

^ Not really, unless your water level is high enough somewhere to put a submersible heater on its side.

Why don't you want to use an undergravel heater? It's pretty much the answer to youir question, short of heating the room that your tank is in.
