I have a planted 55 with underground filter. Plan is to install a canister filter. Can I just stop using the underground filter or do I need to remove it?

I'm sorry but what is an underground filter?
If you mean UGF (under gravel filter) ,you can not simply close it since the gravel is hosting the beneficial bacteria that will die if the ugf is closed.a lot of people have planted tanks with UGF as well as canister filters .so don't worry about it and just let it be.

I use UGF in the front third of my planted 250G.

You wish to use canister filter exclusively, you may. First start using your canisters for a month before stopping your UGF. You can leave the UGF connection where they are.

You may even use your UGF connections for other purposes, like fert. dosing etc.
