Snails - How do I slow them down...?

In short, less food.
Or, you can get a loach or two and wipe them all out.
If you want to just remove *some*, it might be tough if they're the pond snails or the MTS's. You can hand pick them out at every water change to keep it under control, depending on how many you have (might be too much trouble).

Try putting a small piece of lettuce in the bottom of the tank at lights out. The next morning there should be lots of snails grazing on it. Scoop out with a net and repeat as needed.

I use the evil method:

Take an AquaClear powerhead. Remove the strainer/flow control base, so that you have a round thing with a hole in the middle where the impeller is. Take a fine net or media bag and bag it around the powerhead output AND venturi. Tie it there. Stick the powerhead in the tank. Plug it in. Take the powerhead and press the intake along the glass where the snails are. The snails will get sucked in, and pushed into the bag or chopped up and put into the bag. For the snails on the substrate, pick them out and suck them up. When you are done, empty out the dead/alive/mushed up snail bag and clean the power head.

Very small speed bumps......
