I would suggest this plant. It is a 'stem' plant, but grows very slowly in my tanks with good light, CO2 and regular fertilization.
It's not very demanding IME and can be used in a number of applications.
I've been growing it in water at 78°, but many of the profiles I've seen of it say it prefers cooler temps, so it's versatile from that perspective as well.
