I have a small 10 inch cube tank and I have planted monte carlo and dwarf hairgrass. I have a Fluval 12 watt LED 7500k light right on top of the tank.

I use Excel daily and I planted flourish tabs.

How long should the light be on? I read 8 to 10 hours but at my LFS an employee said 8 to 10 hours would be too much because the light is so close to the plants when you add the two inches of substrate. Is that true?

She suggested 6 hours and then maybe 5 depending on what happens.

What do you think should be the amount of time the lights are on?

It is important to understand that light intensity and light duration are 2 separate things when it comes to growing plants. Assuming the aquarium is new (?) I would also suggest start with 6. After 2 weeks increase slowly to 8. With excel only, you probably do not want to go over 8 hours. Plant selection is flexible enough for this setup. Adjust according to plant /algae response.
