I was using some stainless steel mesh for my riccia and after about 2 weeks in the tank I'm noticing it has a bit of rust forming. I know that some stainless can still rust a little bit, but I'm worried this could harm my fish/shrimp.

Anyone else have some advice/experince?

18/10 Stainless Steel generally doesn't rust. The 10 being an addition of nickel which gives it its corrosion resistance. Sadly most Stainless is 18/0 and will most definitely rust.

There are a few sellers on TPT that sell SS 316 squares, and I can vouch that doesn't rust - as they have advertised. I also have another piece of SS that is not SS 316, and that is doing exactly the same thing you are describing.
