I have a lone stem of rotala sp growing horizontal along the substrate. Still healthy, just sideways. Normal?

Yeah that's pretty normal. In my experience it happens when the main group of plants is already very dense or the light is intense.

Ive got a few do it as well, was thinking of cutting each node since they all put down roots and try to propagate this way

Yeah that is normal.

Try pinching the tip off and it will start sending up stems from the nodes.

I've got one doing the same thing looks pretty cool. All the nodes have a new plant growing vertical again. From 1 plant to about 10.
