So I'm workin' on my tank, got Bronze Crypt Wendtii in the front, and Amazon swords in the back.... is there anything I can put in the middle, that's low light/medium?

Do you mean stems?

Just about any Bacopa species would work if you kept it trimmed. Same for some types of Ludwigia.
