I use cuttlebone, different foods, cucumber, but the snails still don't grow great shells.

It seems I need to raise and keep the hardness up. Will adding rocks fix this? I don't want to play with "ph up" additives.

If rocks work, which ones specifically will do the job?

I've read limestone, are there others?

Well water.
Mixed temp, roughly 76F.

Gonna need a lot more information.

What kind of snails? What other critters do you have in your tank?
0,0,5 always out the ground. Don't own kh, gh tests.

What are your water parameters? kH? gH? Temperature? Are you using tap water or remineralized RO/DI water?

Generally speaking, adding rock isn't going to solve your problem.

Okay. You didn't tell us that. Good to know.

Try to get yourself some kH and gH test kits as soon as you can. That will help you know specifically what you can do to improve things - if they need to be improved. Short of that, it's unfortunately just a guessing game.
