I am about to rescape my tank, new hardscape, rearrange plants even take out a little substrate as mine is too deep.

which is more stressful for fish, being around while their home is being messed with.. or being scooopd up into a bucket?

Depends. I find it easier to mess with substrate with no water, so I have a 15 gallon plastic bucket I put fish into when I'm messing around with home interiors. They've always come through none the worse for wear. I think they dislike watching their stuff all go away, and would rather go on vacation. Besides, a filter and heater can go in the 15 gallon bucket, wheras if i"m lowering the water enough to do stuff, the heater and filter need to be turned off.
