I picked up a book at my school's life sciences library on aquarium plants from 1977, looked pretty interesting.

It's showing a picture of ripe fruit on the inflorescence of aponogeton madagascariensis. I searched around on Google but didn't see similar pictures, any thoughts on this?

A lot of this book is naturally outdated, but it's still pretty interesting to read about it, was surprised when I saw Utricularia mentioned as well :)
