Pygmy Chain and Pennywort Melting

Hi all, I've had my tank set up for nearly three weeks now, but I am having some plant problems. My Pygmy Chain Sword and Pennywort are melting (turning brown/clearish). They melted a few days after I put them in, but seemed to be recovering. However they have started melting again recently. I have a low light/low-tech set-up and am dosing with Seachem liquid ferts once a week. All of my other plants are doing great, minus my Bacopa Carolina, which is showing growth at the tips but is turning brown further down the stems. Any tips/suggestions would be greatly appreciated. My specs are below

Dosing:
Nitrogen: 10/16 tsp
Phosphorus: 2 3/4 tsp
Potassium: 7/16 tsp
Equilibrium: 7/64

Equipment:

10 gallon tank
Neotherm 50 Watt heater
1 15Wt8 bulb
Eco-Complete substrate
ZooMed Nano 10 canister filter

Parameters:
Ammonia - 0 ppm
Nitrite - 0 ppm
Nitrate - 5 ppm
pH - 7.74

I'm no expert but what is you tank temp? Nitrates seem to be a bit low maybe shoot for 10-20ppm

It's set at 80 degrees F. Any advice on how to increase nitrates?
You could add a few more fish if your not wanting to dose fertalizer or add some certs to the tank either liquid or dry. 80 F sounds like it would be fine for those plants but I'm no expert on plants and learning a lot myself so take this info with a grain of salt.

Thank you for your advice! I may add some more fish, I'm expecting an order of amano shrimp here soon, maybe that will help.
