Pruning

The red plants in the background have reached the top. Do I just cut them off at the top? The top of the plant is not as attractive once pruned.

You can cut the top and replant the top, or cut the top, remove the bottoms, and only replant the tops.

I suggest leaving the bottoms if you want more plant mass as both the newly planted top and the bottom will continue to grow.

I suggest removing the bottoms if you like the amount of that plant you currently have, because the bottoms do not look as attractive just as a rule.
Best is to cut the top and replant has a habit of putting out aerial roots like crazy and will be a mess soon.

Nice plant thought with constant trimming.
