Plants Brittle/Breaking

It's kind of hard to describe what's going on, but my plants just seem to be too brittle, and the leaves break/tear easily...there's a lot of scarring/bruising too. I was wondering if something might be eating them (I have goldfish and ramshorn snails), but it just doesn't seem like that.
I have pretty high lighting and use CO2. I use DIY ferts about once a week (micros, iron and potassium/sulfate mainly...phosphate when I need it).
Sorry the pics are so poor, I just took them with my phone...

Well it just doesn't really seem like they're eating them, because the breaks are really jagged as you can see, and how do you explain the bruising?
My Nitrates are really high, I'm trying to lower them...
