Dumb question - did a shrimp just molt? And if so, what do I do with it? Leave it there and let nature do it's thing, or remove it?

Yes! Molting is usually a sign of good health, and younger shrimp will molt more often so they can grow.

It is fine to leave it in the tank. It is a good source of calcium, and the shrimp will probably eat it.

Nerite snails look nice, but they lay eggs all over. I’m not a fan, as they are hard to remove.
Also, Anubis is a VERY slow grower. Ive had small plants for five years that only got marginally larger. This can be a good thing though, as they won’t dominate your aquascape.
