If I were to place my Planted+ inside a aquarium hood like the one pictured below, what would be the chances of the light bar overheating and damaging the LEDs?

My ray2 gets fairly warm. In a space like that you will most likely shorten the life of some of the diodes. LED's are fairly sensitive to heat.

The only way to know for sure is to try it, I have a planted plus and it runs relatively cool to the touch, but I have no idea what would happen inside an enclosure. It's cool enough that I would t least try it with the expectation that you might have to put a small cooling fan on it
