Trimming plants usually encourages new and faster growth to occur. By removing parts of the plants you free up energy and resources that would have fed the trimmed areas and the plant then puts them into making new parts

Depends on the plant, most stems branch out and become more bushy but with most of them there comes a point where they start to look kind if scraggly and woody. Its best to periodically cut the tops off and replant to stop that happening.
