Indeed it does look like some species of Galium, thank you! Alas that there are so many different species, I don't think it would be worth the time to sort through them all to find out which I have :/
That's up to you. You could probably at least narrow it down a bit. Could be G. palustre. Interestingly, there are really only two true leaves per node; the rest are modified stipules (spiky hairs in between/around leaves). The others may look like and function as leaves, but they aren't!
