Noob Plant Questions

Okay so I'm pretty new to the whole aquarium thing. This is my very first fish tank. I really enjoy the look of a nice green, somewhat natural looking aquarium. Trying to get some plants to grow in my tank, which seems to be going pretty well. I bought a few random plants when first setting up the tank, including one of those bulb packs from petsmart. Unfortunately I threw away the packaging that said what bulbs it came with. So a few bulbs have sprouted including this one:

First of all, I don't know exactly what kind of plant this is, some sort of crypt perhaps? If anyone could help me in identifying this I would appreciate it. My real question though is in the last two days or so this new stem type thing has sprouted up, and I have no idea what it is or what it is for..

Last night as I was going to bed I put the pink mark on the tank, that was where the top of the stem was at. When I woke up in the morning It was up to the purple mark. About four inches or so overnight.

And from the top:

And just for fun, an overall from a couple days ago. Hoping the HC will grow in. Not quite sure if it will get its roots down through the gravel or what it will do.

I have a few o those also, they are called aponogetons, the shoot will either be a flower, or a new plant, in general the will give off about 7 new plants per sprout like that, I've had as many as 3 at a time, the flowers are very pretty, all white. Youll know if it's a new plant if it starts to form a ball at the top if it. Any questions just ask

Hey thanks for the quick reply and the info. Good to know exactly what the plant is. Was a little bit scared of what that new thing popping out was.

So will the HC spread out over the big gravel rocks or does it need a softer/smaller substrate to get its roots through?
Blargghhhhh I have no clue, I'm on my first portion of hc evar, I'm doing dsm,

wait
the one in the first image seems like an echinodorus magdalensis to me.
try to search on google images for it and compare it to yours.
Hope i was not wrong
Those are aponogeton bulbs. I think they are hybrids so you might not be able to find a name. If you cut the stalk your plant will start growing new leaves again. How long has this tank been planted? Those dracaena in the back are not aquatic plants.

The hybrid thing makes sense, I was trying to figure out which sort of aponogeton they were to no avail. I looked up dracaena and didn't find much, but my gf picked those up from petsmart so not real suprised. I will pull them out if they start to have problems, but they seem to be growing. Only had this tank up and running for a little over three weeks now. Still trying to figure out what other plants to throw in the tank to fill it out. Out of all my plants the only ones I actually know are the java moss and the HC I picked up at the LFS.. :icon_roll

Thanks for the helpful replies everyone.
