I planted a bunch of cuttings a few weeks ago, and some have started growing roots from the middle of the plant. Should i trim these and re-plant to get the roots in the ground?

Many species will do this regardless of how you plant them. If the bases are rotting away but there are healthy roots further up the stem, go ahead and trim / replant.

If the bases are not rotten and the plant is actively growing, you can leave the root shoots or trim them off if you don't like the look of them.

lots of plants just grow that way. They spit out roots from nodes all along the stems. I usually leave them alone. It does make it easier to trim and replant once the lower stems start going.
