If I was to attach Narrow Leaf Java Fern to a driftwood branch close to the water edge, how would it grow? Would it grow up out of the water or drape down? Or would it grow out every direction and float?

I would think it depends how close it is to the water surface. If it is really close, like an inch or so, it will start to grow out of the water once it gets thick enough. Keep in mind though if you have an open top tank most likely the leaves will shrivel due to low humidity.

Plant leaves will always grow towards the light, so it would not drape down into the water.

It mostly grows up, but will eventually spread in every direction.
