I'm thinking about trying a very low tech low maintenance tank with just Java Fern, Anubias and other easy growing plants. Are there any suggestions for easy plants besides those 2 and the different species of them?

Java Fern I've had great success with before even with a tank with virtually no light. I used to be able to grow it in a 10 gallon tank with nothing but a Marineland single bright led.

Cryptocornes and various mosses are perfect. I have rotala rotundifolia in a low light tank and it doesn't grow quickly, and stays green (rather than pink/red as in a high light tank), but it looks nice. Corymbosa compact would work, too, and hygrophila polysperma would be worth a try. Corymbosa compact stays short, so is nice in the foreground.

For a background plant, try Hygrophila Angustifolia - willow hygro. Can't go wrong with cryptoryne wendtii or cryptocoryne undulata.
