I'd like to redecorate my 65g, but I have silver dollars, and silver dollars are flighty little cowards. I'm going to have to remove most of the decor to catch them, but after I've done that, what's the best way to keep them from panicking half to death in the container?

Yep, just keep things calm as you can. Biggest thing is to keep them in the dark (put something to cover up the bucket to prevent jumping and block out light, but make sure to leave a little air gap to allow some fresh air for atmospheric exchange).
For extra calmness, you can put them in a area that has less vibrations (away from you while you are stepping around setting working in the tank). No need to add an airstone to the bucket if the redecorating won't be too long, but if it does take a while you may want to add an airstone (if dissolved oxygen levels get too low, fish will stress).
