Help me with parameters

So on Sunday I had something go wrong with my co2 that caused it to go from 1 bubble every 2 seconds or so to 3 bubbles per second. This caused my pH to go to 6 and shrimp deaths, and one jumper. As these are my self test shrimp its discouraging.
Under a suggestion, I ordered a GH kh test. Just got back from being gone a few days so I tested today and my parameters are horrible. Can I have a few suggestions on what to do.

PH: now 8, when before it was always low 7s

Ammonia: 0 ppm

Nitrite: 1 ppm

Nitrate: 10ppm... need to do a water change bad. Was gone a few days, going to pick up suggested water while I'm out.

KH: unreadable, it took 15 drops so well above 215ppm

GH: hard to read, one drop gave me the light color, didn't get darker with more drops. Best guess is 17.9ppm

Would ro or distilled water help? I saw only 1 out of the 5 shrimp left I'm guessing the rest have died. Should I still keep it small water changes?

How long has your aquarium been set up? The presence of nitrites suggests that it has not properly cycled and/or you are experiencing another cycle due to the shrimp deaths.

For your gH and kH test kits, are you sure they are not expired? They can sometimes give strange readings if expired.

The tank is onto its third month since filling. I thought I saw all the spikes and then leveling to 0's but then again it is my first time watching the cycle so I could have made a mistake.

The plants have changed a few times which disturbed the aqua soil, no idea if that changes anything. All parameters where showing a cycled tank until the co2 mess up... now my plants are suffering (except the dhg) and I have about 3 types of algae. None of this was happening since Sunday.

GH and kh kit was just bought a I hope a store wouldn't send an expired kit. I would be able to confirm this till later tonight.

I started with 6 shrimp and now have 4, I found either a molt of dead shrimp tonight.

I would say that the nitrite spike is likely the cause of the shrimp deaths (or something else may have caused them to die off, resulting in the spike in nitrites).

I would advise you to do some water changes to bring down their levels first.

I did a 30-40% water change and dripped the water in since it was such a large change. I didn't get twitchy shrimp syndrome so I think it went fine. I used distilled water so this should help with my gh, ph, and nitrites but I haven't checked them again since I wanted to see what it would do in 24 hours.

I also scraped a lot of green algae out, scrubbed the BBA, adjusted flow to create a slight water break and introduce more movement in algae area. I do have excel but stopped doing spot treatments when shrimp got stressed.

I still have molting issues with my last female Cherry (1 male, 1 female), and I have no idea how to tell how my amanos are doing.

None of them are eating the shrimp food, but I assume this is more from only have 5 in a tank with lots of algea. But they are hiding all the time so I know they aren't happy.
