What do you mean by mesh? I get HC potted with nutrient foam if that's what you're talking about. For that, you remove all of the foam, then pull apart small clumps of HC similar to how you did. I wouldn't recommend cutting it, it will cause parts partially cut to decay, separate them with your hands instead.
