On a road trip and looking into the idea of adding gobies to my tank. I have done some reading that they are shrimp safe for the most part but I don't know much about them. Which ones are for brackish water and which for fresh? How many in a tank and male/female ratio?

I would say it depends on the species honestly. Gobies are ambush predators, so if it can fit in their mouth they will most likely eat it.

Strictly speaking, bumblebee gobies also do well in hard freshwater...they will even breed in it. Still, all the gobies listed above, except for perhaps bumblebees, are large enough to swallow adult shrimp, the neon blue goby is probably a stiphodon species with specialized requirements, and all of these could take shrimplets easily.
