Since my electrician friend hasn't responded to me yet, and Google has been fruitless, maybe you guys can help me out!

I have three plugs coming from a Fluval Spec V - lights, filter, and heater. They run to a GFCI outlet, but there are only two sockets on that outlet. Would a standard 6-plug adapter work on this outlet and still keep GFCI protection?

Yes, just to reinforce. The GFCI will function the same if there is one thing plugged in or you run 400 things (don't do the second).

And if it's wired first in a series of outlets in your home it protects them also. It protects everything downstream of it.
