In my 58 tall tank that I am more than likely setting up, I am debating about what HOB filters I should go with. Should I go with 2 Aquaclear 70 filters, or would I just be better off with one Aquaclear 110? the tank is 36x18 so not a super long tank like a 55.

I'd say having 2 smaller ones are better than 1 large one however from an aesthetics standpoint you now have double the filters in your tank. A little more unsightly if you care about how it looks.

Pro's with 2 filters are you have more space for putting sponges in, purigen, carbon etc. You also can alternate cleanings between the filters, which may or may not have much or any impact but it's at least an option.

Two filters will lessen the chances of dead spots however it can also be tricky if there is too much flow from the 2 filters. So that's either a pro or con depending on your situation.

I like putting plants in my filters, so I would probably go with 2 filters for more plant space

I'm in favor of two smaller filters to better spread the flow out as well. The larger AC(110) can create a ton of current on one side.
FWIW- I use Aquaclear hob filters on all my planted tanks. I prefer to use no more than one properly sized aquaclear per tank. With my tanks 30-48 inches, I also use a small circulation pump. Using two hob's on a tank, makes it harder for placement of large background plants, due to the overfall area churn. A second hob can also get in the way of placing my eheim automatic feeders when I travel.
I went with 2 brand new AC70 filters. I just feel safer that way knowing there's plenty of filtration/circulation. I'm pretty sure I could get by with the combination of an AC110 and a powerhead, but I had store credit at a LFS where I got the 2 filters for free essentially so I figured why not. I also didn't want the extra bulk of the 110 sticking out even further from the wall

Good choice. I really like the AC filters.
