For anchoring driftwood, I think bolting it to a piece of slate is the way to go.
Aside from that, eggcrate is fairly easy to work with. You can use a pair of wirecutters to break the individual grid-lines, or just break individual pieces off with a plier/leatherman. Or if you are really good, you can just slam something (screwdriver?) through and quickly break off sections (I haven't done this myself...).
And there are few things easier to zip-tie then egg crate...
