Has anyone used Egg Crates to help build hills? I am trying to figure out the best way to hold back substrate, and was thinking maybe I could anchor my driftwood pieces to them as well. Would these work to help form the hills?

Are they relatively easy to work with?

I've used them in the past. Covered with nylon mesh. I used them to keep rocks in place and help prevent from falling, but guess it could be molded to form Hills. I think pvc may be a better option though cause it's more cylindrical.

For anchoring driftwood, I think bolting it to a piece of slate is the way to go.

Aside from that, eggcrate is fairly easy to work with. You can use a pair of wirecutters to break the individual grid-lines, or just break individual pieces off with a plier/leatherman. Or if you are really good, you can just slam something (screwdriver?) through and quickly break off sections (I haven't done this myself...).
And there are few things easier to zip-tie then egg crate...
