Hi guys I think the plants in the pic are E.amazonicus but I'm not entirely sure?

And which would you guys recommend as a mid/back ground plant and in terms of easiness?

To me it does not look at all like E. amazonicus. E amazonicus has a very pointy straight leaf shape. This one looks more like E. uruguanyensis to me but not positive on the ID. Also wanted to give you a bump :D

Most Echinodorus sp. will be background /center point plants in most aquariums.

For easy midground plants you can look at Anubias, Microsorium, Bolbitis and lots of Cryptocoryne.
Background would be most Hygrophila sp, green Myriophyllum and Cabombas, Ludwigia repens and many others
