What would a desireable level of kh be for adequate buffering?

Basically, how low is too low?

At least 1. Each tank is different so you will need to see what your tank requires to keep your pH steady.

The best KH is what the tap water has. That makes keeping it relatively constant easy. If the KH is above 1 it is enough to buffer the pH from CO2 induced changes - the pH still changes with the amount of CO2 in the water, but it does so in a stable manner. If the KH is too low the pH can vary widely even with the CO2 concentration remaining the same.

KH can be in the 0.5-1 ranges without any issues.........

That would be 9 to 18 ppm. 1 degree KH is 17.8ppm.
