I bought and planted some baby dwarf grass from my LFS in my 4 gallon 3 week old tank. Before I planted I rinsed off the plant and in doing so I found a bunch of small grayish pebbles. Some were hard some were soft. I assumed they could be eggs and I thought I washed them all off but today I see this swiming in my tank. What is this? And I am very surprised it is this big if it was just born.

Yes, it's a snail. They can get to a decent size without you ever noticing that they exist. Sometimes they just aren't out when you're looking until one day BAM!

Keep your organic low and youll be fine..

Yep it's a pond snail. As long as there's not too much decaying plant matter/food you shouldn't have to worry about overpopulation. I find them in my tanks every few days and crush them for my fish and shrimp to have as snacks.
