Ive been using an azoo regulator for some time now with a clippard needle valve to more precisely control the output of the co2. Well after i was donig the water change today and cleaning the diffusor i moved the needle valve and when i got back today, all my fish were at the top gasping.

So, i want to change out the current brass needle valve on my azoo regulator. Has anyone done this and know how to remove it safely without damaging the rest of the regulator, and also is it a 1/8 MPT?

I've never held an Azoo regulator. But you should be able to just use a wrench to remove it. And it should be 1/8" NPT.

If the above is true you might want to look at the Ideal Valves needle valves. Expensive but worth every penny.
