Yesterday I removed most of my plants to get rid of them so I can brainstorm on different plants, new layout & this of course kicked up debris everywhere, water was very murky. Woke up this morning to find one shrimp had died & the other shrimp were feasting on him! By the time I saw them eating him he was already half gone so I left his corpse in the tank

I mean, if it is being eaten then I bet its fine. I've had fish die in invert tanks and I only find out that they died when I see a skeleton lying on a rock in the tank.

Ya I've neglected to pull deadies out too. But you have to think if it didn't die from amonia and maybe an infection. Then the others are feasting on an infected meal. I would say its not good to let them finish off what's left of a carcass
