filtration, plants, bacteria bed planning is more important in smaller tanks than larger ones.
growing the type of bacteria necessary to breakdown mulm takes time...

but since we are only asking about the tank size... go larger...

i personaly like small tanks for shrimp ie between 1 and 5 gallon. with that said its really easy to over populate fast depending on the shrimp and how old the ones you start with are and how many you start with. if your just going to start with say 5 or 6 and they are pee wee/ babies or juvies then you can go with the 2.5 cause it will be several months before they are breeding age/size. if your going to start with 20 then go bigger tank to start with

I say the 5.5.g which gives the shrimp more area to move around.

110g Tropical Community & Sakura Shrimp
55g BN Breeding Grounds, Peacock Gudgeons, Panda, Pygmies, & Smudge Spot Cories, Rili Shrimp
10g RCS and show guppies

I keep shrimp in a .5 ,1.5, 2.5.

It is recommended that one masters the water chemistry and shrimp keeping dark arts before delving into a nano or pico tank build... But that goes without saying...

Its not only about buffering but learning how to care for these guys while having the ecosystem in balance. Scaping adds that extra layer of care... Hope you find success in this endeavor, well enough to teach others.
