I'm relatively new to the hobby but one that I've found that I like is Echinodorus quadricostatus. Probably because it grows so well for me.

This picture was taken after about one week having the three plants on the right. About one week later the entire substrate was covered and I had to pull out a few of the new plants.

Seems to be a very easy plant and I like the look. Now if I could just get some of the other plants to grow. Just my 2cents.

maybe dwarf sag? I personally love it in my rainbowfish tank, it stays at about 3" and sends out runners in no time

My foreground is H. micranthemoides. Easy, fast grower...just needs a trim about every two weeks.
