They'll eat baby/juvenile shrimp for sure. As for adult shrimp, I'm not sure. However, even if they don't eat them, they might still harass them to death. In the past, I've tried keeping ghost/glass shrimp with bettas and found the shrimp dead within a day or two. I'm sure the shrimp weren't actually attacked. However, the curious betta definitely scared the shrimp to death.

Yes. I fed a few male RCS culls to my betta, and I was shocked at how well he hunted them. They were adult size as well...

ghost shrimp-most likely
amano shrimp-maybe (my betta definitely chased mine a little)
bamboo shrimp- probably not, they are huge
I have seen tanks with only one big male betta and a bunch of shrimp, but it had plenty of moss and places for the shimp to hide out.
