how to trim jungle vals

Hey my jungle vals grew a little faster then expected jsut wondering what hte best way to trim them back is.

Should i just cut the leafs, or pull out the plant and tear the leaf at the root. Or trim the plant close to teh root and let it grow or what. I was going for a grassy marsh look and succeeded a little to well. My kissing gouramis have no complaints, but my pleco finds it hard to wiggle his 5inch self around ahha

When I had my annoying jungle vals in my high-tech I just snipped them 1" or 2" under the water line.
