do i really need CO2.....

.....in my 10gal tall tank?

for plants i have:

What i think is a "compact" giant hygro
anubias nana
vallisneria
water lettuce
and nymphaea stellata
soon to have java moss if it ever arrives

Hello Messy,

If you really don't want to supplement your tank with CO2, you've certainly chosen a nice set of plants for such an endeavor. I have raised all of those (save the nymphaea) in 10g tanks with no CO2. Mind your substrate and ferts, and get 1-2 wpg over the top, and you'll probably be O.K. Stock the tank heavy from the get-go, if possible.

....then, some day when you are feeling ambitious, hook up a 2L bottle of yeast water to it and watch it fly .

You can use Excel with a ten gallon tank without spending a whole lot of money. That would be a "half-way" option - almost CO2, but less work.
