Help New Tank Problem

I have upgraded form a 29 g to a 55 g. I have had fish off and on since I was 16 and the current fish I had i had them for 5 years never any problems like this. All I have let is on drawf grammi and he is struggling. It all start when I went on vacation and can home to find the care taker had uplugged my heater and everyone had ick. I treated the ick with tetra brand ick treatment also my ammonia levels had spicked so high I was losing fish more to it than the ick. I have water corrected and that is fine now on sign of ick on my fish but I think the damage is done with him . In the event that he does should I brake the whole thing down disinfect it and with what if I do ? Or do I just do a big water change let it cycle agin and get more fish?

I would use the aquarium co-op med trio method. I would do this now while you still have a fish but if your last fish dies I would consider doing it to the empty tank. Here is a video explaining it:
