did my tank complete it's cycle in 1 week?

I'm starting up a 20g long tank. Running a canister filter. Fishless cycle with a uncooked cocktail shrimp

Here are my water tests over the first 7 days. I'm scared that adding tap water to top off did something wrong, as it made the Ammonia disappear. I haven't had any Nitrates yet.

Thoughts?

1: Ammonia 1.0 / Nitrites 0 / Nitrates 0 / ph 6
2: Ammonia 1.0/ Nitrites 0 / Nitrates 0 / ph 7.6
3: Ammonia .5 / Nitrites 0 / Nitrates 0 / ph 7.6
4: Ammonia .5 / Nitrites 0 / Nitrates 0 / ph 6.4
5: Ammonia .5 / Nitrites 0 / Nitrates 0 / ph 7.0
***DAY 5 had enough water evaporation, that the water was getting almost below the return. Topped off with tap water***
6: Ammonia 0 / Nitrites 0 / Nitrates 0 / ph 7.0
7: Ammonia 0 / Nitrites 0 / Nitrates 0 / ph 7.0

Nope, your cycle has hardly started. Keep ammonia 2-4 ppm while you wait out the nitrite spike.

How do I get Ammonia back?

Either buy ammonia from a hardware store (I'm unsure on specific brands) or allow organics to decompose (adding more shrimp for example).

Without an ammonia source, your cycle will not continue.

Try raising the temp of the tank to promote higher microbial activity.
