In-tank food cultures?

A cursory search came up with only one or two things, but I was curious about what live food options are safe to culture inside my tanks that the occupants can forage for when they get hungry. I know blackworms are one option, as well as some snail species for fish like loaches, but what else is out there? Substrate I would assume plays some part in this discussion, and my substrates vary from tank to tank, i.e. sand-capped dirt, sand only, fine gravel, varied-size gravel substrates, etc.

Could we get a discussion going about this? I like the idea of feeding my fish live food when I can but this type of thing might cut down some of the work we do as aquarists.
