Welcome to TPT.

Looks like Echinodorus Osiris to me, aka Melon Sword.
How tall is it? There are several hybrids available and the smallest one that has similar leaves is parviflorus parviflorus "tropica".

Thanks - looks like a great community! Building up to a planted 150 gallon discus tank from my current 10 gallon community tank....so I have lots of questions and I’m sure I’ll find a lot of good information here!

It is about 2-3 inches tall. Interestingly, new leaf growth comes in with a reddish color and then turns green once fully grown in ~5-7 days. You can see a new leaf coming in the picture.

It is rooted in unfertilized gravel with low light and has been doing very well.

In that case, I am pretty positive it's ECHINODORUS PARVIFLORUS 'TROPICA. A great sword that stays small and closer to the substrate at higher light. You might want to feed it a root tab every 1 - 3 months.

I think it is indeed a melon sword and it's going to get a lot bigger.
