How much is too much

Hello, trying out my first planted tank and have a quick question. I just purchased a 5 gallon bucket of substrate from http://www.aquariumplants.com/product_p/ss-1.htm for my 30 gallon tank, the 5 gallon bucket came completely full to the brim and i am happy so far, i know that i have more than enough.

my question is this, can you put too much substrate in the bottom of the tank?
is it ok to make it slope from back being like 5 inches to front like 3 inches?

I have seven inches in the back of my tank, and so far so good.

I have 5 in in the rear and 3-4 up front with no problems
